Every year, the five of us take an extended camping trip over the 4th of July. I absolutely love this time for slowing down, spending time with my family, catching up on reading, and being outdoors. It’s a challenge to pack and prepare for the trip, however, as this year we are staying for 10 days. I’m beginning my planning for camping by meal planning, so here goes!
Breakfast:
Eggs, bacon, and pancakes
Cereal and milk
Sausage gravy and biscuits
Oatmeal with nuts and flaxseed (for me)
Lunches/Dinners:
Beans and cornbread
Chili Dog Casserole (recipe below)
Hot dogs, chips, and fruit
Burgers, baked beans, and pasta salad
Mountain Pies (pizza and grilled cheese)
Snacks/Desserts:
Yogurt and fruit
Popcorn
Mountain Pies (apple pie)
String cheese, nuts, and fruit
Brownies
S’mores
Seasoned oyster crackers
Fruit kebabs and dip
And now, for the recipe!
Chili Dog Casserole
1 lb. ground beef
1 package hot dogs
1 can sloppy joe sauce (2 if you like it saucy)
2 c. shredded cheese
2 cans biscuits
Brown beef in skillet. Meanwhile, slice hot dogs into bite-sized pieces and add to meat. Continue cooking until meat is browned and hot dogs are heated through. Pour can(s) of sloppy joe sauce over meats and pour into a greased 13 x 9 pan. Top with shredded cheddar. Open cans of biscuits and quarter each biscuit. Lay on top of casserole and bake at 375 for 20-25 minutes, or until biscuits are browned.
Special Camping Note: This entire recipe can be prepared in a Dutch Oven if you’re campfire cooking 🙂
